As always, an excellent post.

I had a conversation once with a YEC regarding the accuracy of science and why YECs dismiss it so readily. The thrust of their argument was that science has been wrong so many times, how can it be trusted. My point was that science's ability to be wrong is actually its greatest strength. As you said, science is self-correcting. Its fallibility allows it to be molded to suit the evidence. That is the difference between science and dogma. Science can be questioned. In fact, it is usually encouraged.

Science is the path that leads to Truth. Sometimes that path is winding and we may even have to backtrack a little, but the destination is sure. For theists, there is no path. They believe that they are already at their destination and see no reason to simply look around to see if that's really the case.

Wisdom lies in questioning what you already know to be true.
